Biryani is a popular dish from Indian and Pakistani cuisine that typically features rice, meat (such as chicken or lamb), and a variety of spices. Here is a recipe for making chicken biryani:
Ingredients:
- 1 lb boneless chicken, cut into small pieces
- 2 cups basmati rice
- 3 cups water
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 inch piece of ginger, minced
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala powder
- 1/4 cup yogurt
- 1/4 cup cilantro, chopped
- 1/4 cup mint, chopped
- 2 tbsp ghee or oil
- Salt, to taste
Instructions:
- In a large pot or Dutch oven, heat the ghee or oil over medium heat.
- Add the onions, and cook until they are golden brown.
- Add the ginger and garlic, and cook for another minute.
- Add the chicken and cook until it is no longer pink.
- Add the cumin, coriander, turmeric, red chili powder, and garam masala powder, and stir until the chicken is well coated.
- Add the yogurt and stir until well combined.
- Add the rice and 3 cups of water, and bring the mixture to a boil.
- Reduce the heat to low, and cover the pot or Dutch oven with a tight-fitting lid.
- Cook for 18-20 minutes, or until all of the water has been absorbed and the rice is tender.
- Remove the pot or Dutch oven from the heat, and let it sit for an additional 5 minutes.
- Fluff the rice with a fork, and mix in the chopped cilantro and mint.
- Serve the biryani hot, garnished with more cilantro and mint, if desired.
Note: You can add vegetables like carrot, peas, or cauliflower while cooking chicken. Also you can add saffron soaked milk or kewra water to give it a unique taste.
