Biryani is a popular dish from Indian and Pakistani cuisine that typically features rice, meat (such as chicken or lamb), and a variety of spices. Here is a recipe for making chicken biryani:

Ingredients:

  • 1 lb boneless chicken, cut into small pieces
  • 2 cups basmati rice
  • 3 cups water
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 inch piece of ginger, minced
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala powder
  • 1/4 cup yogurt
  • 1/4 cup cilantro, chopped
  • 1/4 cup mint, chopped
  • 2 tbsp ghee or oil
  • Salt, to taste

Instructions:

  1. In a large pot or Dutch oven, heat the ghee or oil over medium heat.
  2. Add the onions, and cook until they are golden brown.
  3. Add the ginger and garlic, and cook for another minute.
  4. Add the chicken and cook until it is no longer pink.
  5. Add the cumin, coriander, turmeric, red chili powder, and garam masala powder, and stir until the chicken is well coated.
  6. Add the yogurt and stir until well combined.
  7. Add the rice and 3 cups of water, and bring the mixture to a boil.
  8. Reduce the heat to low, and cover the pot or Dutch oven with a tight-fitting lid.
  9. Cook for 18-20 minutes, or until all of the water has been absorbed and the rice is tender.
  10. Remove the pot or Dutch oven from the heat, and let it sit for an additional 5 minutes.
  11. Fluff the rice with a fork, and mix in the chopped cilantro and mint.
  12. Serve the biryani hot, garnished with more cilantro and mint, if desired.

Note: You can add vegetables like carrot, peas, or cauliflower while cooking chicken. Also you can add saffron soaked milk or kewra water to give it a unique taste.
