Ingredients:
- 1 whole chicken or 2-3 lbs of chicken parts
- 1 onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 cloves of garlic, minced
- 8 cups of chicken broth or water
- Salt and pepper to taste
- Optional: chopped fresh parsley or thyme for garnish
Instructions:
- In a large pot, add the chicken and cover with the chicken broth or water. Bring to a boil and then reduce heat to low.
- Skim any foam that rises to the surface.
- Add the onion, carrots, celery, and garlic to the pot.
- Season with salt and pepper to taste.
- Simmer for about 1-1.5 hours, or until the chicken is cooked through and tender.
- Remove the chicken from the pot and let cool slightly.
- Once cool enough to handle, shred the chicken meat and return it to the pot.
- Serve hot, garnished with fresh parsley or thyme if desired.
